Iranian Negin saffron is traded as one of the best (if not the best) saffron in the world.
Up to 150,000 flowers are required for 1 kg of the highest quality saffron threads, which corresponds to a daily workload of approx. 12 pickers! That explains the high price of this noble spice.
Its color is deep red and the threads are characterized by their funnel-shaped shape that spreads upwards. Its fragrance is beguilingly aromatic, the taste excites the unique, spicy flavor with the typical bitterness.
Only the deep red parts of the pistil are used for the quality designation “Negin”, which means “the diamond on the ring”. The quality is measured in the ISO standard. The decisive factors for the assessment are the crocin (coloring content), picrocrocin (bitter substance), and the safranal content (fragrance).
For the purchased lot, the values are for Crocin 246, Picrocricin 92, and Safranal 38. Negin has a minimum crocin content of 19
