ORGANIC ANXI IRON GODDESS OF MERCY

Notes of peaches, orchids and vegetal flavours.

Gande Town, Anxi, Fujian province, China.

INTRODUCTION:

Our Organic Iron Goddess of Mercy (Tie Guan Yin) is a rare find as very few teas in this region are certified organic, adhering to the strict pesticide and farming controls.  Made using traditional Tie Guan Yin tea-making techniques, 2 to 3 half matured leaves are hand picked and then rolled into tight balls. The leaf is 30% oxidized, by firstly bruising the leaves in a bamboo drum and then allowing them to rest and gradually wither. The tea brews a bright, golden coloured liquor with a light floral fragrance and sweet long lasting after taste.

BREW GUIDE:

Per cup: 1 tsp  90°C  4 minutes

Can be infused up to 8 times.
For oolongs we prefer the gong fu method of brewing, using a larger amount of leaf and shorter gradually increasing steeping times of 30 seconds.
